Zen Chef: Cauliflower Cheese
Cauliflower cheese is a traditional British dish and it also happens to be vegetarian.
Ingredients
one medium cauliflower
olive oil, 50 ml
plain flour, 40g
full cream milk, 400ml
mature cheddar, 200g
In a cup, blend the oil and flour to a paste and then gradually add milk until the mixture has creamy texture. Pour this into a pan, stir in the rest of the milk and heat slowly. Grate a quarter of the cheese and put aside, then slice the remainder and add to the pan. Rinse the cauliflower, trim off any bad bits and separate individual florets. If you want you can also trim the tougher outer skin from the stem and cook this too (and do the same with broccoli). Put the cauliflower in a pan on a high heat and simmer for five minutes. When the sauce has just come to the boil put the cauliflower in an oven dish, pour on the sauce, sprinkle the grated cheese on top and bake for 20 - 30 minutes at 170 degrees.
